Summer Seafood Gazpacho

Summer Seafood Gazpacho

This gazpacho is so light and summery; it is the perfect start to any dinner and is sure to impress any palate. With the rising summer temperatures, it’s difficult to spend time in the hot kitchen.  This recipe fortunately requires more refrigerator time than oven time, and will help cool you from the inside out.

Ingedients (serves 6)

20 oz clamato juice

20 oz juice tomato

6 tbsp herb cilantro, fine chopped

4 tbsp herb dill fresh, fine chopped

1 ea avocado

4 oz shrimp 41-50 p&d

4 oz scallops bay

4 oz cream cheese

1.5 oz onions red, fine diced

Begin with lightly poaching the shrimp and scallops in salted water (you can also use any other seafood you like, crab, lobster, large scallops or bay shrimp). Next, mix the tomato and clamato juice together with the diced red onions and chopped herbs. Let this combination rest for 4 hours.

Before serving, cube the cream cheese and avocado into 3/8″ pieces and divide them between the 6 bowls with the seafood placed at the bottom of the bowl. Finally, gently ladle the broth over the seafood. Serve chilled.
